I was a pretty picky eater growing up, and soup was near the top of my do-not-touch food list. Thankfully, tastes change and over the years, soup has become one of my very favorite dinner items. It is the perfect companion for these rainy fall days. And to top if off, soup can be super economical, taking advantage of seasonal produce, inexpensive beans, and those random leftovers in your fridge. One pot can stretch into many meals, and the flavors taste even better over the next day or two!
This week I am sharing some of my favorite tried-and-true soup recipes. I don’t plan to make seven pots of soup/chili this week (although my husband wouldn’t complain), but hopefully this gives you some inspiration to try some new recipes (along with some side dish ideas). Share your favorite soups (with recipe links, if possible) in the comments section!
Here are some of my favorite soup menu plans:
Monday — Mexican Black Bean Chili (How to Soak & Cook Dried Beans), quesadillas
Tuesday — Creamy Tomato Soup, grilled cheese sandwiches, sliced apples
Wednesday — Buffalo Chicken Chili, tortilla chips, Canned Applesauce
Thursday — Cream of Mushroom Soup, No-Knead Bread, green salad
Friday — Lentil Soup, Buttermilk Biscuits, coleslaw
Saturday — Mexican Chicken Soup, tortilla chips with guacamole & salsa
Sunday — Slow Cooker White Bean Soup (trying this one for the 1st time), No-Knead Bread, fruit salad

I made your no knead bread (my first time making bread BTW) and the white bean soup for my MOPS group tonight. I got rave reviews from all with requests for the recipes. Thank you for sharing your recipes with all of us. I’m not afraid of bread making now, and am excited to do it again (okay, perhaps not with the “help” of my 5 year old this time 🙂 !).

Yum! Can’t wait to try some of these babies out. Thank you. The link to the Buffalo Chicken Chili isn’t working for me. Its taking me to ABC news (and I really don’t care what Miley Cyrus’ tongue says about her health). Anyone else having a problem with that link? Again, thank you for taking the time to do this each week.
