I am a mostly stay-at-home Mom to our wonderful 15-month old daughter. I was, however, an Elementary Music Teacher before my daughter was born, so I enjoy subbing once a week.
When I meal plan I want to make easy meals, that taste great and are most of all healthy. Because I have a one year old daughter the meals need to be something I can make without a lot of time and fuss. All of these meals take around 30 minutes or less hands on time, which is perfect for most people’s busy schedule!
Here’s what’s for dinner at my house this week:
Monday — Crockpot Turkey Pumpkin Chili I always start off the week with a soup, usually in the Crockpot, so we have leftovers for the rest of the week.
Tuesday — Slow Cooker Paprika Pork over Parmesan Polenta (As you can see I LOVE my Crockpot!)
Wednesday — Roasted Spaghetti Squash with Sausage and Kale This is my daughter’s absolute favorite! She will eat a whole bowl by herself. I do microwave the squash instead of roast it because it saves a lot of time.
Thursday — Healthy Szechuan Chicken with Brown Rice My husband recently asked me to make Chinese food at home and I found this recipe and have made it multiple times now. It is a light and refreshing meal.
Friday — Turkey Burgers with Caramelized Shallots and Blue Cheese Talk about yummy! I don’t make the mayo; we use the blue cheese and mustard instead.
Saturday — Chicken Spaghetti Casserole This is a “lightened” version of the Pioneer Woman’s recipe. It’s still not necessarily healthy, but it sure is delicious!
Sunday — Balsamic Chicken with Roasted Vegetables This recipe will make your whole house smell wonderful!

Thanks for the lightened recipe for Chicken Spaghetti, it’s a favorite around here and can’t wait to try a healthier version of it.
