July has arrived, bringing with it our first long stretch of hot weather. The 7-day forecast is showing 4 days of “hot” followed by 3 days of “sunny.” If you don’t have air conditioning in your home, that translates to “How can I make dinner without turning on the oven?”
It’s tempting to survive on cold cereal or takeout. Instead my plan is to create simple, satisfying meals without turning my oven on once.
Here’s what’s for dinner at my house this week:
Monday — Belgian Waffles, plain yogurt with Canned Cherries
Tuesday — Honey Mustard Grilled Chicken, Grilled Sweet Potatoes, Cabbage Salad with Buttermilk Dressing
Wednesday — Speedy Summer Hemp Power Salad, tortilla chips, Fruit Smoothies
Thursday — Fourth of July BBQ
Friday — Pita Bread with Spicy Hummus and Middle Eastern Vegetable Salad (will add quinoa from the freezer)
Saturday — Slow Cooker Pulled Pork Sandwiches (set up on the deck), sliced vegetables, potato chips
Sunday — Leftovers

We used a turkey fryer outside yesterday to cook up 20 ears of corn at once! We also use it for water bath canning outside…doesn’t heat up the house at all & weather is still nice enough during canning season to do this outside.

I read a great tip for really hot days so your house doesn’t heat up more. Put your crockpot outside and cook in it.

I’m making rice bowls with spicy curry sauce (recipe from your website) for dinner tonight with company. We’ve been eating lots of rice bowls (brown rice in the rice cooker) and taco salads lately.
