Once September rolls around, I am ready to be in fall-mode. I want to eat soup and buy apples and wear sweaters again. So last week’s 90-degree days threw me for a loop. I didn’t feel like thinking about, much less actually cooking dinner until things cooled off… around 10pm. This week, I am happy to see rain in the forecast and plan to actually turn on my oven. Crazy things may follow. Like dinner on the table before seven!
Here’s what’s for dinner at my house this week:
Monday — Breakfast for Dinner: French Toast, scrambled eggs
Tuesday — Baked Potatoes, green salads, Zucchini Parmesan Crisps
Wednesday — Calzones with Basil Pesto, Chicken, and Mozzarella, kale salad
Thursday — Baked Pasta with Broccoli Rabe & Sausage (think I might substitute kale & mushrooms), fresh fruit
Friday — Leftovers
Saturday —Simple Roast Chicken, Homestyle Scalloped Potatoes, steamed broccoli
Sunday — Leftovers
