This week I am focusing on simple meals. The beginning of our week is going to be packed, leaving little time to make dinner. And the end of our week, we’ll be packing for a quick weekend trip. We’ll be staying in a hotel with a kitchenette in our room, and my plan is to prep easy meals before we leave. So I’m looking for filling meal options that can be pulled together quickly.

Here’s what’s for dinner at my house/hotel this week:
Monday — Quinoa Patties (using quinoa from the freezer), kale salad, fresh melon
Tuesday — Beans & Greens (using beans from the freezer), fresh corn
Wednesday — BLT Sandwiches, chips, fresh melon
Thursday — Dinner Out
Friday — Spaghetti, No-Knead Bread, kale salad
Saturday — Rice Bowls with Citrus Soy Dressing, fresh fruit
Sunday — Dinner Out

I love to dice up carrots, celery and onion, mix them up and store them in a freezer bag in the freezer. I do the same with cooked and shredded chicken breasts. Those things are base ingredients for so many different dishes and makes cooking them quick and easy.

Your sides of melon made me think of the salad I created the other day. I used canary melon (so good!), wheat berries, a little arugula, toasted pine nuts, and tossed it with a bit of olive oil and orange zest (well actually tangerine zest because that’s what I had). It’s a refreshing, healthy, and less boring salad that works well for lunches or taken on weekend adventures!

Emily, it is clear I have been enjoying your posts for awhile when 4 out of 5 of the recipes you are making this week are ones I have tried (and loved! ) and I plan on trying the rice bowls soon! (Although I guess I knew about BLTs before this site. ) Ha ha! Thanks for all the ideas!

Em, I just read your rice series and was wondering if you’ve ever been to yumm cafe? Our life group does weekly yumm bowls when we get together and it is seriously the highlight of our week! If you ever do a two-parter, you HAVE to find and post a recipe for yumm sauce!

There are several recipes on pinterest. I LOVE Yumm bowls and make them often.

How have I never heard of Yumm bowls before?! I just looked up a recipe and it looks really close to the Whole Bowl Tali Sauce (http://www.frugallivingnw.com/frugal-homemaking/rice-bowls-with-spicy-curry-sauce-inspired-by-the-whole-bowl-food-cart/), but I’m going to try the Yumm next week. Thanks for the tip!

Simple meal ideas:
– Sweet potato and black bean quesadillas;
– homemade sushi using canned salmon, cucumber and avocado;
– rice bowls using Yumm sauce I buy from the store;
– pulled pork I’ve cooked ahead of time and frozen;
– salmon patties from Costco
