Menu Plan by Kate
The last month has been nuts. Our menu has consisted of spaghetti, homemade pizza, tacos and breakfast for dinner. I’m ready to get out of the rut and now that the craziness has lifted it’s back to menu planning. Our menu plans limit dairy (none for me) and wheat (mostly because I have no self-control) so these recipes are delicious and don’t make me miss cheese.
Here’s what’s for dinner at my house this week:
Monday — Gluten-free Crockpot clam chowder
Tuesday — Baked chicken strips with honey mustard dipping sauce, homemade fries (no recipe, just on the fly), Roasted Cauliflower & Broccoli
Wednesday — Turkey Chili — Old Weight Watchers recipe. Just beans, tomatoes, diced chili’s, turkey and spices.
Thursday — Dinner Group with friends
Friday — Homemade pizza using this crust for the kids and cauliflower crust for me with goat cheese. It’s amazing. Seriously. Don’t gag until you try it.
Saturday — Breakfast for dinner. Okay, I couldn’t get it away from it this week because I’m in love with this asparagus Benedict (asparagus is on sale at Fred Meyer this week). Grain free pumpkin pancakes adding deliciousness.
Sunday — Teriyaki chicken with broccoli and jasmine rice. I use Trader Joe’s Soyaki and I marinate the chicken overnight and bake it at 350 for 30 minutes. Comes out tender every time.
