I’m a little unmotivated this week but I managed to pull together a weekly menu. Thankfully, three nights we are having dinner out so that helps.
Here’s what’s for dinner at my house this week:
Monday — It’s my birthday! We’ll see what my husband drums up. I love Thai food so maybe we’ll head out for some Panang Curry
Tuesday — Almond Chicken with Veggie Rice (I cook for a friend and this is her request. The rest of the family likes it too)
Wednesday — Sausage Pasta Bake — easy meal that freezes well
Thursday — Dinner club here — Orange Chicken, Broccoli & Rice
Friday — Dinner at church
Saturday — Dinner at Oba! with 2 other birthday buddies
Sunday — Taquitos from the freezer
Other things I plan to make this week:
:: Breakfast Cookies for easy, quick breakfast before school. I reduce the amount of sugar and use coconut oil
:: Apple Betty for dinner club dessert and Chex Pumpkin Pie crunch for the kids without the pecans
:: Pumpkin Butter and Pumpkin Cookies for an after school treat. Not together, of course.
For those who asked for the Pumpkin Oatmeal recipe from last week, my hope is to post it sometime this week.

Where are you getting your pumpkin puree? I looked at several stores this past weekend because I was making pumpkin pie bars, but no-one has it in stock yet (and they said they won’t for another month?!). I just ran out from what I stocked up on last fall. I subbed sweet potato and the bars still turned out delicious, but nothing beats the ease of opening a can of pure pumpkin puree, and I love pumpkin goodies this time of year!
