Here’s what’s for dinner at my house this week:
Monday — Crockpot Rotisserie Style Chicken, Baked Yams, Peas and Corn, Fresh Pineapple
Tuesday — Quinoa Pizza Bites (I make them into regular size muffins, and be sure to use non-stick spray or silicone baking liners), Gluten Free Garlic Parmesan Pull-Aparts, Roasted Broccoli
Wednesday — Stuffed Peppers (I use this recipe as a starting point, and make quite a few changes, including using some of the leftover rotisserie style chicken from Monday’s dinner) . Roasted Acorn Squash, Home-Canned Apricots
Thursday — Leftovers
Friday — Chicken Noodle Soup, Gluten Free Corn Bread, Green Salad with whatever fresh fruit & veggies I have around to throw on top of it, Fresh Apples
Saturday — Breakfast for Dinner: Gluten Free Pumpkin Pancakes, Sausage, Smoothies
Sunday — Leftovers Buffet (clean out the fridge night!)
And here’s what we are snacking on this week: Monster Cookies ( I cut the recipe in half, and it still makes a ton), Trail Mix, fresh apples

Thank you, Thank you for your post. I was needing some new dinner ideas and with 4 of the 6 members of our family gluten free (as well as other allergies) it is hard to come up with something different. We had the stuffed peppers tonight. YUM!!! And we will be trying the pizza bites and parmasan pull tomorrow. I am going to prep tonight after the kids go to bed because tomorrow is a crazy busy day.

I love your gluten free menu plan. I was recently told by my doctor that I need to eat gluten free and I have been challenged with find quick family friendly meals.
I usually do my meal planning and grocery shopping on Sunday since the week is so busy. Is there a way you could post your gluten free meal plan on Saturday or Sunday?

I know that it puts you trying to find your own ideas for one week, but you could just write down her ideas on your calendar for next week or print off the post for your records. That way you will always have a list to refer to when you need ideas for meals.
