School is right around the corner, which means meal times often become the hairiest part of the day. It’s 4:30. I have three hungry children and only moments before anarchy sets in.
One way to combat this time is to plan ahead and prepare freezer meals. We have meals from the freezer at least two nights a week, which helps tremendously as much of the prep work is completed beforehand. I also like to use leftovers from one night and transform them in to a new dish the next night.
Here’s what’s for dinner at my house this week:
Monday — Black Bean and Corn Salsa Chicken and Rice
Tuesday — Five Ingredient Fried Rice using leftover rice from Monday night
Wednesday — Meat Crust Quiche (The egg and veggie mixture is one of my freezer meals.)
Thursday — Spaghetti, No-Knead Bread and Salad
Friday — Italian Sloppy Joes using leftover sauce and bread from Thursday night
Saturday — We are having a family dinner at my parent’s house. I am bringing Broccoli and Ramen Noodle Salad.
Sunday — Breakfast for Dinner

I like to add 2 cups of cut up chicken to the Broccoli/Ramen Salad for a quick meal.

How do you do the egg & veggie mixture for the freezer? Is everything raw when you freeze it? I’ve heard eggs don’t freeze we’ll unless yolks and whites are separated or something??? Can you explain? Thanks!

The egg mixture is raw when I put it into the freezer. I mix the eggs, milk/cream, veggies, meat, spices,etc into a bowl then pour the mixture into a gallon freezer bag and lay it flat in the freezer to freeze. I have had no problems with my eggs or any other ingredients when it unthaws and the meal tastes delicious!
