We found out in July that our then 7-month-old was allergic to dairy and egg. We cut back on dairy but with a 2-year-old in the house it was hard to completely get rid of milk and cheese. After another scare and ER visit last week, we have decided to completely take both dairy and egg out of our diets. It hasn’t been an easy transition, but one that is crucial for the safety of our baby. Just to be sure there is no dairy or egg in anything I buy, I double/triple check the ingredients from this link.
Here’s what’s for dinner at my house this week:
Monday — Taco Salad (We leave the cheese off, but you could use dairy-free cheese.)
Tuesday — Lasagna Soup, No-Knead Bread, green salads
Wednesday — Breakfast for Dinner- Vegan Cinnamon-Apple French Toast (using vegan bread), bacon
Thursday — Glazed Balsamic Chicken, rice (How to Cook Perfect Rice), green beans, home-canned peaches
Friday — Roasted Butternut Squash Soup (with croutons made from leftover No-Knead Bread)
Saturday — Crispy Quinoa Bake (we leave off the cheese but you could use DF cheese), tortilla chips
Sunday — Chicken and Sweet Potato Stir-Fry, home-canned pears

Good luck Emily -therapeutic cooking is tough. Hope your baby does better, I congratulate you on moving the whole family to the change, it’s not easy.

I dont usually read the meal plan much. I was scanning thru this one and did a double take on the Lasagna Soup. Okay, gotta try that one. With a few personal tweeks. Sausage or turkey sausage, cheese sprinkled on at the end and make it more stew like.
