As usual during the holidays, our eating habits slid into dumpy territory. It feels good to clean out the fridge and get back on track. I am trying to make fresh juices every other day, as well as eating less sugar and more vegetables. Making good food choices can be tough, but feeling better is great motivation.
Here’s what’s for dinner at my house this week:
Monday — Black Bean & Cheese Quesadillas, Roasted Butternut Squash
Tuesday — Superfood Crunch Salad, No Knead Bread, goat cheese
Wednesday — Quinoa Patties with avocado, Roasted Beets
Thursday — Shakshuka with corn tortillas, fruit salad
Friday — Dinner Out
Saturday — Pizza Night, green salads
Sunday — Dinner Out
