It is good to be home again, after an unexpected change of plans turned our weekend into something totally different than we expected. A friend's mom told me, "Life is what happens in between our plans." I like that. By this definition, we are high on life right now. I have no idea what this coming week holds, but it is somewhat comforting to plan some structure, even something as simple as a menu plan. Once September rolls around, I am ready to be in fall-mode. I want to eat soup and buy apples and wear sweaters again. So last week's 90-degree days threw me for a loop. I didn't feel like thinking about, much less actually cooking dinner until things cooled off... around 10pm. This week, I am happy to see rain in the forecast and plan to actually turn on my oven. As I mentioned in last week's menu plan post, we are being overtaken by zucchini right now. You can only give away so many zucchini, the fruitcake of summer, to unsuspecting friends and family. At some point, you have to deal with the bounty. Thankfully, you responded with lots of great ideas featuring zucchini. So, instead of just thinking, "Hm. That sounds good. I should try that someday," I am declaring this the official week of zucchini. What’s for dinner? This week’s freezer meal menu plan (8/26)
Menu Plan by Krista School is right around the corner, which means meal times often become the hairiest part of the day. It’s 4:30. I have three hungry children and only moments before anarchy sets in. One way to combat this time is to plan ahead and prepare freezer meals. We have meals from the freezer at least two nights a week, which helps tremendously as much of the prep work is completed beforehand. I also like to use leftovers from one night and transform them in to a new dish the next night. What’s for dinner? This week’s gluten-free menu plan (8/12)
Menu Plan by Laurie Summer is flying by, and I am making the most of the last few weeks of my summer vacation. In other words, I am canning like a fool these days. Rain and cold will soon be upon us, and my little people sure do light up when we open a jar of home-canned fruit (see our Canning Guides for more!) on a long gray day. What does all this mean? In a nutshell, between the sunny hot August days and a stove full of boiling jars my house is much warmer than I prefer. This week I am focusing on simple meals. The beginning of our week is going to be packed, leaving little time to make dinner. And the end of our week, we'll be packing for a quick weekend trip. We'll be staying in a hotel with a kitchenette in our room, and my plan is to prep easy meals before we leave. So I'm looking for filling meal options that can be pulled together quickly.
