Coconut peach cobbler recipe (perfect way to enjoy fresh peaches!)
Coconut Peach Cobbler recipe Just a few weeks ago, I was talking a big game about how I was going to take a break this summer from picking, canning, or even thinking about large amounts of produce. I made it to August until I buckled under the pressure. The peaches & tomatoes made me do it (reading Farmer Boy to my kids right now didn't help, either)! So this past weekend I hauled out the strainer to make applesauce, the canner to can peaches, and the baking pans to make marinara sauce. The floors were sticky and the house was destroyed, but it didn't matter. I just felt this deep satisfaction that comes with jars cooling on the Keep Reading
Cream Scones
Cream Scones I love scones. Despite their hoity-toity, high tea image, scones are a simple addition to any breakfast, brunch, or dessert menu. I served these cream scones for breakfast this morning and plan on using them as a base for strawberry shortcake later in the week. The recipe makes 16 smaller scones, which is great, because they are not exactly low in fat. I don't know about you, but I always feel better eating food in smaller portions. Even if I end up eating twice as many, it always feels like fewer calories. Despite their sometimes dry, tough reputation, scones are light, buttery, and down right delicious when made correctly. The key Keep Reading
Raspberry Ricotta Cake recipe
Raspberry Ricotta Cake (recipe) I am totally off my produce game this summer. You see those raspberries? I bought them. At the store. In a white plastic bag in the freezer section. I'm pretty sure a little piece of my heart broke off and died right there in aisle 5. What is happening here?! My normal MO is Crazy U-Pick Person from June-September. 200 pounds of peaches? No problem. 65 pounds of blueberries? Sign me up. My hands are stained, my car is constantly loaded with boxes, and my counters are full of ripening fruit (and pesky fruit flies). But this summer has been quieter in the fruit department, and I am okay with that (I think? I am Keep Reading
Carrot cake baked oatmeal (gluten-free, dairy-free recipe)
Carrot Cake Baked Oatmeal Because I know you need something exciting, today we're talking about carrots and oatmeal! Buckle up. Now, I'm not a licensed counselor or anything, but I think there's something to be said for being stuck in a rut. I mean, I wouldn't recommend it for one's career or relationships. But breakfast? I live in Rutsville, where the local diner serves eggs + toast or yogurt + granola every single morning. And I really like it that way. If something unexpected like French Toast happens, I'll eat my standard breakfast for lunch. If the whole family wants muffins, we do muffins, but the whole time I feel like I'm skipping out Keep Reading
Blueberry French Toast Bake (perfect for fresh blueberries!)
Blueberry French Toast Bake I hit the blueberry fields again this morning, walking away with five hot, tired kids (It's okay. They were ours.) and four bowls of fresh, sweet blueberries. I decided that some of today's blueberries would be tomorrow's French toast. Only I couldn't wait until tomorrow. So we ate this French toast for dinner tonight. It was delicious and would make a great addition to any brunch or breakfast... or dinner menu. This recipe comes from our church cookbook, submitted by two great cooks in our congregation (I made a few minor changes). It quickly became a favorite, making regular appearances at many brunches & potlucks. Keep Reading
Sour cream & onion baked eggs (recipe)
Sour Cream & Onion Baked Eggs (recipe) The first time I ate these baked eggs, I was with family up in Washington. I sat at the kitchen counter drinking coffee and watching my uncle as he cracked eggs into a pan and sprinkled them with salt and pepper, sour cream, shredded cheese, and green onions. That's it. Nothing fussy. Nothing fancy. He slid the pan into the oven and 20 minutes later we were all dying over something so simple but so crazy delicious. It was like a magic trick. We watched him do every step, but the ending was still a happy surprise. I now serve them to pretty much every single overnight guest in our home. They might have to Keep Reading
