We’re vegetarians, so this is a common combo…
quiche – made with pillsbury pie crusts from couponing, milk, eggs, cheese, and veggies – spinach + mushroom is good, so is green pepper + onion, or broccoli, or pesto and tomato – basically whatever you have.
honey mustard carrots – make carrot sticks or use baby carrots, steam or microwave, saute very briefly with dijon mustard, a dab of sweetener (honey or brown sugar), a little butter.
roasted potatoes – chop potatoes (red, white, baking, sweet all work) into 1-2″ cubes, spread on olive oil greased baking sheet. Salt/pepper and possibly add rosemary from the bush outside. bake.
