Summer is JUST AROUND THE CORNER which means a total change in schedule, right? Kids are home all day, the sun is beckoning us outside, and fun is the top priority.
Well, that’s not true. While I want fun to be the top priority, the regulars of life remain — cleaning, bathing, and eating.
And the eating part is always the most difficult part for me. The last thing I want to do after an afternoon at the pool, the park, or something else awesome is to stand at the stove for an hour preparing dinner.
So I’m giving myself a little gift this summer — TWENTY-FIVE nights off from cooking! And you can give yourself the same gift!

Every morning from June 12-16, I am going to assemble five freezer meals + 1 slow cooker meal for that evening. At the end of the week, I’ll have 25 meals ready to go in my freezer.
During the summer all I have to do is thaw the bag overnight in the fridge then dump the contents in the slow cooker in the morning. Come evening, I’ll spend 5-10 minutes getting it all ready!

Shop for your Challenge ingredients and supplies — Get your Eat at Home Meal Plan membership going so you can print off the grocery shopping list. Go through your pantry, freezer, and fridge and cross off the items you already have and then go shopping for the rest before Monday morning!
In addition to the ingredients, you’ll need some additional supplies next week, including:
- Permanent marker — to label bags
- Labels — if you are using my printable labels (these will be available as we get closer to the challenge)
- Gallon-sized freezer bags (25) — if you already have gallon-sized storage bags, you can double bag them to avoid freezer burn
- Slow cooker — use what you have. If you don’t have one yet, a 3-4 quart slow cooker will work for most households
- Cookie sheets — to flash-freeze your bags flat
- Bag holder — not necessary but certainly makes assembly easier!
