What’s for dinner? This week’s menu plan (9/24)
It is good to be home again, after an unexpected change of plans turned our weekend into something totally different than we expected. A friend's mom told me, "Life is what happens in between our plans." I like that. By this definition, we are high on life right now. I have no idea what this coming week holds, but it is somewhat comforting to plan some structure, even something as simple as a menu plan. Here's what's for dinner at my house this week: Monday -- Mac and Cheese, fresh corn & tomatoes Tuesday -- Taco Soup, chips & guacamole Wednesday -- Leftovers Thursday -- Lasagna (with Roasted Marinara Sauce), No-Knead Bread, green Keep Reading

What’s for dinner? This week’s menu plan (9/16)
Once September rolls around, I am ready to be in fall-mode. I want to eat soup and buy apples and wear sweaters again. So last week's 90-degree days threw me for a loop. I didn't feel like thinking about, much less actually cooking dinner until things cooled off... around 10pm. This week, I am happy to see rain in the forecast and plan to actually turn on my oven. Crazy things may follow. Like dinner on the table before seven! Here's what's for dinner at my house this week: Monday -- Breakfast for Dinner: French Toast, scrambled eggs Tuesday -- Baked Potatoes, green salads, Zucchini Parmesan Crisps Wednesday -- Calzones with Basil Pesto, Chicken, Keep Reading

What’s for dinner? This week’s zucchini menu plan (9/9)
As I mentioned in last week's menu plan post, we are being overtaken by zucchini right now. You can only give away so many zucchini, the fruitcake of summer, to unsuspecting friends and family. At some point, you have to deal with the bounty. Thankfully, you responded with lots of great ideas featuring zucchini. So, instead of just thinking, "Hm. That sounds good. I should try that someday," I am declaring this the official week of zucchini. Here's what's for dinner at my house this week: Monday -- Pizza, green salads, fresh fruit Tuesday -- Dill Zucchini Soup, No-Knead Bread, fresh fruit Wednesday -- Leftovers Thursday -- Abondigas (see Keep Reading
