This is the first time in a while that I have actually had my grocery shopping done at the beginning of the week in order for me to have a menu planned for Monday. It is really quite calming to be done for the week, so let’s hope this is a trend that will continue!
Breakfast:
* Waffles
*Bob’s Breakfast, aka: yogurt & granola with milk and fruit
*eggs on toast
*oatmeal
Lunch:
*tuna fish sandwiches (have to use up all that tuna somehow!)
*PB&J’s, fruit
*Mac&Cheese, fruit smoothie
Snacks:
*strawberry banana smoothies
*zucchini bread
*hummus & crackers
*almonds & cranberries
*carrots from the garden (no really, they eat them like candy!)
Dinner:
*Tuna Melts, garden fresh green beans with peanut sauce, fruit
*Thai Peanut Chicken Stirfry with red bell peppers, garden fresh zucchini and snow peas
*Spinach Quiche, French Bread
*Dinner at Friends
*Chicken Burritos with feta and spinach, fruit
*Brown rice w broccoli,cauliflower, and whatever other veggie my garden is producing!

I have a lot of zucchini right now so I have been looking for ways to use it.
Today I made 4 loaves of zucchini chocolate chip bread, though only three are showing as I gave one to my neighbor already. I used my friend, Melinda’s, recipe found in our church cookbook, but you can find hundreds of recipes at allrecipes.

I love both quiche and fritata but I don't seem to ever make it. I order it out but never make it.

Last week I tried a Zucchini Brownie recipe, and my kids LOVED them–I pureed the zucchini called for in the recipe and opted to omit the frosting and the kids loved them they way they were.
