I’m BACK!!! Finally, I have a menu planned before the week begins and I also have all my ingredients as well. Boy does it feel great to be prepared:) Now that my husband is home during the week I am needing to menu plan. When it was just the little boys and I, I could get away with serving ground beef with beans and rice every night, but I am thinking that my husband will want something more than that. So it’s back to menu planning for me.
I get most of my main dishes from A Year of Slow Cooking because I love using my CrockPot. Dinner in the slowcooker by 11am and I’m done cooking for the day!

Thank you for posting these! I am in the same boat. My husband is often gone during the week. I love him dearly, but OH how nice it is to not have to think about dinner quite so much. The kids and I are a little "easier" to please. It is so nice to do the crock pot and be done thinking about dinner by 11AM!(and he is happy!)

Glad to see your meal planning back. I look forward to these. Since I've seen others plan their meals, I've started doing this as well. I can't believe what a huge difference it really does make. I'm always getting new ideas. I also like that A Year of Slow Cooking site; I've gotten some fantastic (and frugal! and easy to clean my kitchen!) recipes from her.

Great lasagna slow cooker recipe:
8 uncooked noodles. Break half into bottom of crock pot. Cook 1 lb of hamburger, put half over noodles. Over the meat our half of a 28 oz jar of spaghetti sauce, 1/3 cup of water, half of a 15 oz container of ricotta cheese and a cup of mozzarella cheese. Repeat the layers of 4 broken up uncooked noodles, hamburger, spaghetti sauce, 1/3 cup water, ricotta cheese and mozzarella. Cook on low for 5 hours! So tasty! Serve with salad and garlic bread and enjoy!
