This week’s menu is brought to you by Bethany, who lives in Wilsonville, Oregon with her great husband and three stinkin’ cute kids. Her time is spent homeschooling two of her kids, blogging, reading, being involved at her church, couponing, and doing all the various things that come with the titles of wife, mom, and homemaker.
MONDAY: Chicken brocoli quiche/green salad
TUESDAY: Always Taco Tuesday (including yummy crockpot beans & some kind of taco meat with homemade seasoning, both from the freezer)
WEDNESDAY: Lentil & ham soup (crockpot) & whole wheat drop biscuits
THURSDAY: Cracked wheat & rice pilaf/veggie stir fry (skip the chicken & add more veggies)
FRIDAY: Upside-down pizza/green salad/banana spice cookies for dessert
SATURDAY: Sausage tortellini with marinara sauce/frozen corn (our 6yo is cooking & chose this meal)
SUNDAY: Always leftovers so that it’s a day of rest for everyone, including me
WHOLE WHEAT BISCUITS
- 2 c. whole wheat flour
- 1/2 t. salt
- heaping T. baking powder
- 5 T. butter, softened
- 1 c. milk
Preheat the oven to 450 degrees. In a large bowl, stir together the flour, salt and baking powder. Cut in the butter with a pastry cutter or fork. Stir in the milk. Drop by heaping spoonfuls onto cookie sheet. Bake ten minutes. Makes about 15 drop biscuits.

I bet a GREAT twist on these drop biscuits would be to substitute 1/2 the butter with the free Tuscan butter we got free! I’m looking for ways to use it!

Caro – How many it feeds kinda depends the appetites in question and if anything else is being served. Each quiche fills a regular pie pan and our family of five usually polishes them both off at one meal. When we had less family members I’d often freeze the second quiche. Just be sure that you don’t burn the crusts if you reheat it in the oven. Hope that helps!
