This week’s menu is brought to you by Marissa from Newberg, Oregon. Marissa is a relatively new blogger of 3 months (www.marissasmenu.blogspot.com), going on 12-year wife to husband, a.k.a. Mr. Wonderful, and mother to 3 rambunctious boys. Loves GNO (Girls Night Out) with fun friends, karaoke, pilates, and hot dates with the aforementioned Mr. Wonderful. Does NOT like cooking, but does it anyway. š Also happens to be gluten-free, as is every recipe.
MONDAY: Italian Sausage Soup. Fan favorite. Serve with green salad. Only dirty one pot!!
TUESDAY: Yummy Chicken and The Best Ever Green Beans. Close contender for fan favorite. Serve with rice or baked potatoes. The leftover chicken is perfect on a salad the next day or as a pizza topping!
WEDNESDAY: Fajita Night! No buying seasoning packets/mixes. You don’t need them! Served with corn, rice, and fresh fruit. I like cantelope.
THURSDAY: Spaghetti UNjarred. That’s right. It’s from scratch. Do NOT be alarmed. Promise promise, it’s easy and the best spaghetti you’ve ever had. 10-minute prep time. Served with green salad.
FRIDAY: Flippin’ Omelets. Who doesn’t like breakfast for dinner?? This one is hearty and protein-rich. Great for using those leftover baked potatoes too. Served with fresh fruit salad. I like a blend of citrus varieties.
SATURDAY: Always leftovers š
SUNDAY:Ā Kids’ Favorite Maple Syrup Salmon. Somewhat sweet, teriyaki-like meal. Kids gobble up. What more can you ask?! Served with rice or quinoa and blanched green beans.
