This week’s Menu Plan Monday is brought to you by Steffany from Prineville, Oregon. She’s a freelance editor and writer, a full-time mom to two energetic little boys, and the wife of a truly spectacular man. She loves running, good coffee, reading in bed, tinted moisturizer, heart-to-hearts with her sisters, “The Week” magazine, and Johnny Cash. Oh, and a big, juicy hamburger. And making lists!
MONDAY: Asian chicken burgers (I’m using Costco ground turkey) & steamed green beans
TUESDAY: Beef and sausage meatloaf with roasted bell peppers (I double this — leftover meatloaf makes the best sandwiches!), green salad, mashed potatoes
WEDNESDAY: Easy enchiladas (combine frozen chicken taquitos, enchilada sauce, cheese, sliced olives & green onions; bake at 350°F for 40 minutes), black
beans, sliced avocados
THURSDAY: Fish tacos with sweet slaw and spicy mayo
FRIDAY: Beef & Snow Peas (my husband’s favorite!), rice, fresh pineapple
SATURDAY: Oven-baked chicken/vegetable/potato packets (leftovers make terrific breakfast burritos)
SUNDAY: Breakfast for dinner! Waffles, bacon, fruit salad
