This week’s menu is from Kalin, a substitute teacher and the blogger behind Eating Machine. She’s a newlywed who lives in Portland with her husband and two kittens-the only babies she’s planning to have around for a few more years!
MONDAY: Valentine’s Day — eating out!
TUESDAY: Enchiladas plus salad (using leftover roast chicken)
WEDNESDAY: Split Pea Soup, bread (homemade if I’m motivated!)
THURSDAY: Sweet & Sour Meatballs, brown rice, broccoli, salad
FRIDAY: Brown Sugar Salmon, quinoa, green beans, spinach
SATURDAY: Dinner out
SUNDAY: Pulled Pork, sweet potatoes, salald
Sweet and Sour Sauce: This is quick, easy, and paired with the frozen meatballs from Costco and some brown rice makes for a lazy meal my husband loves.
- ¼ c brown sugar
- ¼ c white sugar (can just do ½ c white sugar if you want)
- ⅔ c water
- ⅓ c rice vinegar (or white vinegar)
- 2 T ketchup
- 1 T soy sauce
- 2 T cornstarch
Just whisk them all together in a saucepan on medium heat until thickened-about 5 minutes
