Make One, Freeze One Challenge
I’m freaking out a little bit. There are 10 days left in October and I have $33 in my grocery envelope. For seven people.
Luckily, I have a TON of meat in the freezer (thanks to regular Zaycon Fresh deliveries) and a fairly packed pantry (thanks to strategic shopping principles outlined in my Smart Grocery Savings course).
But here’s my other problem — I don’t enjoy preparing food. It’s such a daily struggle because cooking for me is a total drag.
So, you can imagine my excitement when I discovered that Erin from $5 Dinners and MyFreezEasy was hosting a Make One, Freeze One Challenge next week.
The Challenge is totally free (you know I love free) and is not difficult at all. In fact, she’s going to walk us through all the steps.
The result? Dinners on the table every night next week AND five meals in the freezer for later.
All I have to do is buy the food this weekend and follow the directions she’s going to email me starting Monday. Erin’s a pro at making crazy inexpensive, yet delicious recipes so I should stay within my $33 budget.
In fact, I just read through my shopping list and I already have most of the ingredients! One quick trip to WinCo and I should be set.
Here’s How the Challenge Works
Step 1: Pick Your Meal Plan
There are four options based on your dietary preference, cooking method, and type of meat. The plan I chose, the Traditional Plan, has gluten-free and dairy-free modifications listed!
Step 2: Go Shopping
You will be emailed a lovely shopping list, organized by meal and category. The list also includes side dishes for the dinners you make for that night!
Step 3: Make One Meal, Freeze One Meal Next Week
The Challenge starts on Monday, October 24. Every day you’ll get an email with what you’re supposed to do that day so you have dinner on the table that night PLUS a dinner in your freezer for later.
You will do this Monday through Friday next week. Obviously you can skip a day or omit recipes or ingredients that don’t suite your family’s taste. For instance, my plan has one pork chop meal, so I’m going to skip that and make something else.
Step 4: Enjoy Your Freezer Full of Food!
The Challenge also includes labels so you can quickly prepare your freezer meals in the future without hunting for the recipes online.

Would be great for a vegetarian plan or a whole food plant based plan. I belong to a group and they would love that.

I love this! I’m not sure why it took forever for this idea to click for me, but now whenever I make soup or something casserole-like like a lasagna or enchiladas I go ahead and make a second pan to freeze. It saves us time and money on nights that I just can’t cook. I am looking forward to more meal ideas.
