Eating a vegetable-based diet, or at least working in 1-2 meatless dinners a week, is a good way to add variety to your meals and cut your grocery budget. To read more, check out our post, Less Meat, More Vegetables. Our family has been spending time at Zenger Farms every week, so my kids are really excited about things like radishes and purple beans and kale. I'm all over that, especially since the only meat they really like comes in the shape of a hot dog. Here's what's for dinner at my house this week: Monday -- Leftover Soup (From Bob's Red Mill Black Bean Soup Mix. Even my picky kids loved it!) Tuesday -- Quinoa Patties, Roasted Sweet Keep Reading
Roasted delicata squash with pomegranate and pumpkin seeds (recipe)
Anytime I know somebody who loves something within a category they normally hate, I sit up straight and pay close attention. The person who hates romantic comedies but has Sleepless in Seattle at the top of their movie list, who hates pop music but is gushing about the new Taylor Swift song, who hates sports but has memorized every Blazer player stat. Rip City, Baby. Or, say, someone who normally hates squash but saw this picture in an old Sunset magazine, went out the next day, bought three delicata squash for the first time ever, made the recipe, and ate it immediately (while taking pictures, no less). To use the most tired phrase in the whole Keep Reading

What’s for dinner? This week’s menu plan (10/27)
Over the weekend, we watched a soccer game in the pouring rain, lost our power in the midst of howling wind, and did yard work in the bright sunshine. All in the span of a single day. Welcome to fall in the Pacific NW. It's such a moody season. My husband and I love it, especially those stormy days when we can stay home and crank up our wood stove (if the kids take long naps, it's just the icing on the cake). It makes me want to make and eat nothing but comfort food. So that's exactly what I'm going to do this week. Here's what's for dinner at my house: Monday -- Cream of Wild Mushroom Soup (simplified a bit), No-Knead Bread, green salad Tuesday Keep Reading

What’s for dinner? This week’s menu plan (10/13)
Last week, Stomach Flu stopped by our house and stuck around way too long. Normally stinky, unexpected visitors would totally throw off our week. But last week one of our sanity savers was having a menu plan. I'm not kidding! Life got messy, but we still ate a real dinner every single night. There was something very reassuring about having a plan (and actually sticking with it). I'd highly recommend it (see why here). Here's what's for dinner at my house this week: Monday -- Quinoa Patties, Kale Salad, roasted sweet potatoes Tuesday -- Pita Bread with Hummus & Middle Eastern Vegetable Salad Wednesday -- Brown Rice & Black Beans, Keep Reading
All Things Pumpkin: Over 50 easy pumpkin recipes!
Ah, pumpkin. There are many delicious and easy pumpkin recipes out there. We've complied some of our favorites in this post. First, a fun fact. In early colonies, pumpkin shells were used as a template for haircuts to ensure a round and uniform finished cut. As a result of this practice, New Englanders were sometimes nicknamed "pumpkinheads." Second, before you start making your pumpkin deliciousness you'll need pumpkin puree. You can make your own pumpkin puree or you can buy from Amazon. I usually stick to organic given that I'm eating large amounts of pumpkin puree throughout the year. And make sure you check out our What to Buy at Trader Keep Reading
