Blackened Salmon with Roasted Vegetables
Sometimes frugality has its’ concessions. My husband and I are big fans of wild salmon, but somehow paying $14.99 per pound (and up) for it doesn’t really have a place in our food budget. Purchasing clearance fish has never been my thing, and I had pretty much resigned myself to the fact that the only wild salmon we would be consuming came in a can from Costco.
New Seasons Market sent me a little sample of two affordable varieties of wild salmon to try: Pink and Keta. One serving of Pink salmon actually contains 107% of the daily recommended value of vitamin D, which I’m pretty sure we are all deficient in here in the Pacific Northwest.
Keta salmon looks similar to Sockeye, but has less fat and fewer calories. Both of these varieties are usually found for in between $5 and $9 per pound, which seems much more realistic for a “splurge” for our family.
Here’s what I made with two small fillets of salmon. This was a perfect simple and quick meal for my husband and myself.
Blackened Salmon with Roasted Vegetables
Blackening seasoning can be purchased or easily made with basic spices at home.
1-2 lb. salmon fillets
1 T. olive oil
1 1/2 T. paprika
1 T. garlic powder
1 T. onion powder
1 T. ground dried thyme
1 t. ground black pepper
1 t. cayenne pepper
1 t. dried basil
1 t. dried oregano
Salt to taste
- To make the seasoning mix, combine the paprika, garlic powder, onion powder, thyme, black pepper, cayenne pepper, basil, and oregano in a bowl until evenly mixed.
- Preheat a skillet on the stove to medium (I used cast iron). Remove salmon from package and rub blackening seasoning on the side without skin. Sprinkle with a pinch of salt.
- Heat olive oil in the pre-heated pan. Place the salmon skin-side down in the pan and cook until the bottom half of the fillet is opaque.
- Flip the salmon and gently peel off the skin. Sprinkle additional blackening seasoning on the top of the fillet.
- Cook an additional 5-8 minutes depending on the thickness of the fish. It’s ready when the whole fillet is opaque and the healthy fats start to seep out of the fish. Flip once more and cook 1 minute to crisp up the seasonings.
- Remove and serve on top of roasted vegetables.
