This is the last week of our pantry/freezer eating challenge! My goal for February was to spend $200 on groceries. It looks like I'll end up coming in around $250 by Thursday. I'm still happy with this, as I was able to create the bulk of our meals around what we already had on hand. Last week I ran out of butter, eggs, and produce in one week. So I went over my goal but still ended up under my normal budget. And I found the strawberries buried at the bottom of our chest freezer! So overall, an exciting month around our house. Here's what's for dinner at my house this week: Monday -- Refried Bean Tostadas, canned fruit Tuesday -- Pasta and White Keep Reading
What’s for dinner? This week’s Paleo menu plan (2/18)
Menu Plan by Melody of This Beautiful Frugal Life We are a family of four, including two toddler boys who eat their body weight in food every day. We eat a Paleo-ish diet, with the majority of our meals and snacks made with whole foods. We don't eat pasta, beans or grains of any kind and very little dairy. We are super busy during the week, with trips to the gym most afternoons, so are constantly on the lookout for meals that can be prepared ahead of time or thrown in the crock pot. Meal planning is very important for our family, as the last minute options we used to rely on (grilled cheese, PB&J, frozen pizza) aren't in the cards Keep Reading
Great Value refrigerated pie crust: Menu-planning party idea #GreatValue
A few weeks ago, my friend Rebecca sent out an email with Meal Planning Get Together in the subject line. Talking about food + hanging out with friends = two of my favorite things so I knew this would be good. Here is her idea in her words: I have been thinking about... "the difficulties of meal planning and how hard it is to come up with something new and delicious to feed our families. I always feel like I default to the same 4 or 5 meals every week or so and I would love to branch out without sifting through all my old recipes and cookbooks. Then, I had a lightbulb moment; what if a few of us women got together and brought our favorite recipes we Keep Reading
What’s for dinner? This week’s gluten-free menu plan (2/11)
Menu Plan by Laurie The beginning of the year is always a time for me to get our family budget back on track, and we have started this year out with cutting way back, just to see if I can do it for a while. I prepared for the arrival of baby #3 by stocking up the pantry and freezer last fall, and since the first of the year have managed to spend less than $30 a week on groceries. I have been trying to only purchase dairy and produce on a weekly basis, and just being creative with what we have on hand for our meals. Here's what our gluten-free household is eating this week: Monday -- Chicken Enchilada Chili (I triple the beans and omit the Keep Reading
What’s for dinner? This week’s menu plan (2/4)
My goal for last month was to eat from our pantry and freezer as much as possible, supplementing with a few trips to the grocery store for fresh produce and dairy products. If my stuffed freezer is any indication, I didn't do so hot. So this month I am going to cut my grocery budget in half ($200) to force myself to get creative with what I already have on hand. I am determined to find those strawberries at the bottom of my chest freezer by the end of February. Here's what's for dinner at my house this week: Monday -- Taco Soup, grilled cheese sandwiches Tuesday -- Mushroom & Spinach Lasagna, No-Knead Bread, Raw Tuscan Kale Salad Wednesday Keep Reading
What’s for dinner? This week’s (sugar-free, wheat-free) menu plan (1/28)
Menu Plan by Brittany I had a baby in December and have recently been fighting a losing battle against thrush. A sugar-free, wheat-free diet is supposed to help, so my diet has been restrictive, to say the least. Luckily, there are a few edible items out there that I can still eat. Here's what's for dinner at my house this week: Monday -- Acorn Squash Soup Tuesday -- Crock Pot Whole Chicken, brown rice, some sort of vegetable. (I tried to find a simple recipe to link to but they all call for so many spices. All I do is plunk that thing into the crock pot on high for about 3 hours and use a meat thermometer to be sure it is done) Wednesday -- Keep Reading
What’s for dinner? This week’s menu plan (1/14)
During the month of January, I've been trying to create meals based on ingredients from my pantry and freezer as much as possible. I, along with my wallet and bathroom scale, am still recovering from December's crazy rush of shopping-cooking-eating. I normally hate the blahs of January, but I am loving this month so far. I think it just feels good to slow down and simplify our routine a bit. My husband helped me create this menu plan as we watched Downton Abbey last night. He asked for scallops to be added. You know, just in case I happened to pick some up when I was at the fish market this week. Needless to say, they didn't make the final Keep Reading
