Oh man, nothing beats spring in the Pacific NW. Unless it's summer. Or fall. Yep, fall is really great, too. I think most of us endure the Januarys and Februarys for the Aprils and Octobers. My husband and I have been spending every spare sunny minute working in our yard and garden and on the eternal chicken coop project (more on that soon), but here are some recipes I will definitely be whipping up in the kitchen this month: Basic Fruit Muffins with Streusel - Are strawberries "in season"? Menu Plan by Stephanie My family includes myself, my husband, and my two sons, ages 3 1/2 and 16 months. We live near Olympia, Washington, and I'm a stay at home mom. Nobody except me likes eating veggies straight up, so I've been playing with different ways to prepare them, so everyone will actually, you know, eat them. I have a goal of serving unprocessed foods, but sometimes they end up in the pantry anyway. My husband and I put this menu plan together while we watched Call the Midwife. This is pretty much how we roll every Sunday night. Watch a show together while planning what to eat for the week ahead. Not a bad tradition. And we love this show (especially Chummy), but it doesn't exactly inspire one's appetite. My husband didn't seem to have any problem, eating an ice cream sandwich and calling out "Lasagna!" in the middle of a birth scene. Hey, whatever works. I'm ready to get out of the rut and now that the craziness has lifted it's back to menu planning. What’s for dinner? This week’s vegetarian menu plan (3/17)
I started this vegetarian menu plan while watching the documentary series 30-Days by Morgan Spurlock (Thanks to the recommendation from Katy, The Non-Consumer Advocate). The first episode follows him and his fiance as they attempt to live for 30 days working minimum wage jobs. I'd echo Katy's recommendation. It's a good reality/attitude check, examining the struggles faced by low-income families. And the scene about free activities in the city? Hilarious. Local bank or hospital tours! My husband and I watched it at least four times, laughing harder each time. Anyway, most of their dinners were beans and rice, which is pretty much the most economical Keep Reading
