I’m loving this Fall weather. I think I can finally start using my oven! I’ve made small headway on my monthly meal planning. I have 3 weeks so far. I’m hoping to get a 3 month rotation set with a few days left over for ‘on the fly’ cooking.
Here’s what’s for dinner at my house this week:
Monday — Chicken Stuffing Bake — Using frozen chicken from all my Simple Roast Chicken and made Cream of Chicken soup with Lactose Free milk. Dairy and I are not friends. It’s super easy to make. Don’t be scared off. Try it. It’s delicious!
Tuesday — Asian Turkey Meatballs with rice & broccoli — so delicious! Kids love these
Wednesday — Turkey Meatloaf with mashed potatoes & broccoli — an old WW recipe that I have heavily adapted
Thursday — dinner club. Not my week!
Friday — Cod Fish & Chips — using this recipe with my leftover Almond Meal from the Almond Milk I made. Kids might think I’m torturing them but they at least have to try it.
Saturday — On the fly dinner — we’ll be gone all day.
Sunday — Chicken Teryaki with Udon Noodles & broccoli — a recipe I created after having it at a small grocery store food court in Bellingham.
Other things I’m making this week:
:: Pumpkin Pancakes. Hands down the best! I’ll make a big batch tonight to last us the entire week.
:: Overnight Pumpkin Oatmeal for me — my own recipe that I’ve adapted from 4 others. I make this almost every week of the year. No joke! I have an oatmeal addiction
:: Salted Carmel Apple Butter — FAIL!!! Started this last night in hopes to can with Angela this afternoon. My crockpot must be ridiculously hot because I cooked it the exact time in the recipe and it burnt! It’s a huge bummer that I wasted all those apples we picked this weekend. Does anyone know why or have a hot crockpot like mine?

My husband makes a bunch of pancakes once a week and then freezes them when they are cool.They microwave perfectly!

I’d also love to see the pumpkin oatmeal recipe. Also, sorry if this is a stupid question, but how do you make a huge batch of pancakes to have all week? Do you cook them all, and then reheat them throughout the week? If so, how do you reheat them? In the microwave? Or, do you mix the batter, and then make them each day?

Regarding the crockpot apple butter…
My crockpot also cooks hot. Does your crockpot have a warm setting? Instead of the low setting, use the warm setting. I’ve made peach butter this way (after a failed attempt when I scorched it). It works! I’m going to give your recipe a try also. Looks yummy ;).

I use my crock pot almost every day. I’ve been through 3, and they all cook hot leaving a scorched taste even if they don’t burn. Last time I bought the Crock Pot model with a digital timer. If the recipe says 8 hours on high, I set mine for 4-5 on low. When it’s done, it automatically switches to warm so that it’s still safe food temperature when we come home. It’s one of the best investments I’ve ever made because I’m not wasting all those ingredients that burn. Good luck!

I also tried the Salted Caramel Apple Butter and tossed it. Tastes scorched. I’m bummed that I wasted time and supplies on it. I’ve tried 2 other “butter” recipes in the crockpot and didn’t like them either. I’m considering trying the recipe again but doing it in a pot on the stove instead of the crockpot.

I just got an email from Johns Incredible pizza saying that for a limited time the buffet will only be 2.99 on Tuesdays all day (add 99 cents for a drink). Easy dinner if you live nearby.

Would love the recipe too. My crockpot is super hot as well, and I am gone 10 hours most days. Thinking of buying a timer for my crockpot to plug into.

Yes, please post the pumpkin oatmeal recipe! Just this morning I was eyeing the pumpkin puree in the fridge and the oatmeal cooking on the stove and thinking “hmm…”
