I’ve taken a 4 month hiatus from planning menus and I couldn’t be more frantic. Every night we have the same stressful hour where we pour over what we are going to prepare. I haven’t cooked a lot of my favorite bean recipes in forever because these take at least 2 hours to make. It’s not hard to leave a small pot of something sitting on the stove all afternoon, but it is hard to magically make them cook in 10 minutes when I am starving. This is why I’m glad I’m being “forced” to get my act back together. I can resurrect some of my favorite meals and maybe ad an ounce sanity to our chaotic house.
Monday: Black Bean Soup – 1 can black beans, 1 can kidney beans, 1 can chicken broth, 16 oz. salsa, corn. Sprinkle with cheese. Add sour cream if you like. Eat with chips.
Tuesday: Spaghetti and Meatballs — This is my favorite meatball recipe (Ignore the bit about the sauce though).
Wednesday: Shrimp Chow Mein
Thursday: Steak, Brocoli, Seasoned Potatoes – Just toss small potato pieces in olive oil, rosemary, thyme, minced onion, and garlic salt in a bowl. Then broil in 1 layer on a flat pan, turning every 5 minutes until brown.
Friday: Patio Casserole (We call it Katie Casserole in our house after my sister-in-law) All it is is cooked ground beef/turkey, cooked elbow macaroni, frozen corn, 1 can tomato sauce, and grated cheese mixed up and microwaved until the cheese is melted. It is surprisingly delicious.
Saturday: Homemade Chicken Soup
Sunday: Confetti Quesadillas
