Here’s what’s for dinner at our house this week. You may notice that my dishes look a little more involved and possibly not budget friendly as some, but I make it work by cooking most of the items from scratch AND I love to cook! I also get paid to cook for a friend who works full time, so some of the dishes are her choices.
You might also notice that I don’t eat beef. My husband, on the other hand, does. But I’m the cook, so I get to choose. My parents spoil him plenty when they come to town.
Monday – Almond chicken (from the chicken e-book) with Veggie Rice*
Tuesday – Pizza (homemade dough) with sausage (save 1/2 sausage for Saturday’s meal), olives, and cheese.
Wednesday – Ranch Burgers on homemade buns with Yukon fries and carrot sticks
Thursday – Dinner Club — a group of 4 families meet weekly for dinner. We trade houses every week and have for 8 years now! Thankfully, it’s not my week!
Friday – Asian Turkey lettuce wraps
Saturday – Hashbrown quiche with fruit and salad
Sunday – Sausage & Spinach pasta bake*
And just for those who like a complete meal plan, I’ll let you in on what’s for breakfast and lunch:
Breakfast – we’ll eat Whole Wheat pancakes, Pumpkin Oatmeal and eggs
Lunches – Quesadilla’s, PB, Cream Cheese, or Grilled Cheese sandwiches (on homemade bread), Gardenburgers from Costco
Special Snacks – I LOVE to bake and have to restrain myself, but it’s fun to make a treat every once in a while. I’m planning on diving into the pumpkin to make Pumpkin Chocolate Chip cookies.

i’d made my list before i’d seen yours so it was funny to me that both our families are having homemade pizza on tuesday and hamburgers on wednesday… we’re also doing grilled cheese this week and cookies (which i never make)…

great mind think alike! Homemade pizza is my standby. I thought of picking up the Freschetta at Albertsons this week with their doubles, but I just couldn’t do it. Homemade pizza is so much better.

First of all, I would love to get paid to cook for someone! Why not get paid for something you love to do?!
Here’s our list for the week:
Sun: Swiss chard & white bean stew
Mon: Ducks game at sister-in-law’s house – dinner there – I think
Tue: Chicken tacos
Wed: Chicken enchiladas (with leftover chicken from Tue.)
Thu: French Dip w/ French fries (no French dressing or French toast – my 80’s plug!)
Fri: Out of town – dinner will be at the airport

has anyone ever tried those black bean burgers at Costco? I’m not a big Gardenburger fan, nor do I really like ground turkey – but I have been wanting to try these, but it’s such a big package, and I’m a little nervous. I think I will try those Ranch Burgers tho! Perhaps if I add all that stuff to the ground meat it won’t taste as bad as I think it does ;-P (yes sometimes you have to fool yourself like a child)

they’re really good! they have chipotle flavor, so they taste great. they have a recipe on the side of the box that we did for dinner a few times and loved it!

I can’t even get my act together for dinner, let alone breakfast and lunch! The word “impressed” doesn’t begin to cover it…

don’t be impressed. It’s the way I grew up, so it comes fairly naturally. Cleaning my house, not so much.
