My husband and I are teachers, and this time of year always seems especially crazy. Between chaperoning overnight trips and enduring end-of-the-year chaos (here in Mississippi, school gets out in May), “easy” is the number one criteria for a meal to make it onto our menu plan.
We don’t have any allergies or special dietary needs in our family. I do try to prepare at least a couple meals each week that will provide us with leftovers to take to school as lunches, and I don’t want us to eat total crap. Because my husband and our two toddlers are pretty picky, I try to keep things simple.
Here’s what’s for dinner at my house this week:
Monday — Sausage & Tortellini
Tuesday — Tacos
Wednesday — Weeknight Chicken Stir-Fry
Thursday — Copycat Taco Bell Mexican Pizzas (with leftover taco meat)
Friday — Blueberry Pie Pancakes
Saturday — Garlic Parmesan Chicken
Sunday — Sausage, Egg, & Cheese Crescent Roll Bake

That’s crazy! I never knew that. I just know that all my Oregonian friends thought Piggly Wiggly was something made up for Steel Magnolias or Sweet Home Alabama.
