I can’t believe this is the final week of February! Usually I dread this time of year and the gray, cold days that come with it. Early 2015 (and its 60+ degree days) and I are getting along just fine.
This also marks the final week of my February Freezer Challenge. My goal was to create meals starting with what I already have in my freezer and spend under $150 on fresh dairy & produce (Read more here: week 1, week 2, week 3). I ended up going over, spending $171 total. I have a $13 produce Groupon that will get us through this week.
I’m cool with our February total, as it’s still several hundred dollars less than I usually spend each month on groceries. And it involved delivering a meal to another family + juicing every single day. Crazy! I have actually been surprised at how easy this “challenge” ended up being; I think it shows how lazy I had become with our grocery spending. And I feel like I barely made a dent in our freezers. So I’m going to keep the challenge rolling into March, but I’ll bump the total up to $250 because I’m dying to take advantage of Costco’s organic coupons (going on now through 3/15).
Here’s what’s for dinner at my house this week:
Monday — Chicken Noodle Soup, biscuits From the Freezer: Chicken Stock, onions, shredded chicken
Tuesday — Tomato Sauce with Onion & Butter, noodles, green salads
Wednesday — Beans & Greens, Roasted Beets & Garlic, fresh fruit From the Freezer: garbanzo beans
Thursday — Quinoa Patties, Roasted Sweet Potatoes From the Freezer: cooked quinoa
Friday — Whole Wheat Pancakes, Sour Cream & Onion Baked Eggs, Fruit Smoothies From the freezer: fruit
Saturday — Vegetable stir fry, fresh fruit From the Freezer: Brown Rice, vegetables
Sunday — Leftovers

Thank you for posting the Quinoa patty recipe. I added broccoli and decreased the eggs and my family enjoys it so much!
