Over the weekend, we watched a soccer game in the pouring rain, lost our power in the midst of howling wind, and did yard work in the bright sunshine. All in the span of a single day. Welcome to fall in the Pacific NW. It’s such a moody season. My husband and I love it, especially those stormy days when we can stay home and crank up our wood stove (if the kids take long naps, it’s just the icing on the cake). It makes me want to make and eat nothing but comfort food. So that’s exactly what I’m going to do this week.
Here’s what’s for dinner at my house:
Monday — Cream of Wild Mushroom Soup (simplified a bit), No-Knead Bread, green salad
Tuesday — Meatloaf with BBQ Sauce, baked sweet potatoes, Roasted Brussel Sprouts with Balsamic Vinegar & Honey
Wednesday — Chicken Tortilla Soup, tortilla chips, sliced pears
Thursday — Loaded Baked Potatoes, fruit salad
Friday — Grilled Sausages, Cauliflower Cheese (can’t wait to try this new recipe!), roasted sweet potatoes
Saturday — Dinner with Friends
Sunday — Leftovers
