Last week, Stomach Flu stopped by our house and stuck around way too long. Normally stinky, unexpected visitors would totally throw off our week. But last week one of our sanity savers was having a menu plan. I’m not kidding! Life got messy, but we still ate a real dinner every single night. There was something very reassuring about having a plan (and actually sticking with it). I’d highly recommend it (see why here).
Here’s what’s for dinner at my house this week:
Monday — Quinoa Patties, Kale Salad, roasted sweet potatoes
Tuesday — Pita Bread with Hummus & Middle Eastern Vegetable Salad
Wednesday — Brown Rice & Black Beans, salsa
Thursday — Broccoli Gribiche, Sweet Potato Biscuits, green salads
Friday — Pizza Night, fresh vegetables
Saturday — Chef Salads, No-Knead Bread
Sunday — Leftovers
