I’m starting a Fitness Challenge today. A bunch of us are competing on teams for the next 8 weeks. I’m excited for the boost of motivation. This challenge covers pretty much every area: sleep, exercise, diet. Oh, and there’s a penalty for eating refined white sugar and white flour. Ouch. That will be a challenge for me, but I’m determined to stick with it (and drag my family along for the ride, of course).
Here’s what’s for dinner at my house this week:
Monday — Dinner with Friends
Tuesday — Quinoa Patties, Simple Kale Salad (with roasted sweet potato, apples, and cashews)
Wednesday — Beans & Greens, fresh fruit
Thursday — Baked Eggs, roasted garlic potatoes, smoothies
Friday — Rice Bowls with Citrus Soy Dressing, fruit
Saturday — Roasted Winter Salad Bowl
Sunday — Dinner with Friends
