Watermelon Feta Mint Salad
Summertime is so close I can almost taste it. A few more weeks and we’ll have kids in the sprinkler, burgers on the grill, tomatoes in the garden. And watermelons rolling in as fast as we can eat them.
I don’t mean to brag, but one of my life skills is picking out the perfect watermelon. I’ve only had a handful of bum ones in the last decade. I know everybody has their own routine in the produce department, sniffing-shaking-patting, but I personally stick to the heft and the thump. You want a melon that feels heavy and sounds hollow when you knock your knuckles on it.
I learned it from my dad who learned it from his dad and now I’m passing it on to my kids. This is important stuff! My daughter is still struggling to tie her own shoelaces, but she can pick out a killer watermelon.
This light, refreshing salad combines some of my favorite ingredients, all of which will be in season all summer long: watermelon, cucumber, mint, basil, feta, and lime. Crazy, I know, but trust me it totally works. It’s like summertime in a bowl, with bright colors and crisp, clean flavors.
It doesn’t hurt that it’s also super simple to prepare. Maybe 10 minutes? Because you have better things to do in the summer (see above: sprinkler, grill, garden) Serve this salad as a side with grilled meat or fish. It would be the perfect addition for a graduation party, summer BBQ, or park picnic (if you can have those in your area).
Watermelon Feta Mint Salad
4 c. cubed seedless watermelon
1 cucumber, peeled, seeded and chopped
1/2 c. feta cheese, cubed or crumbled
1/4 c. fresh mint, julienned
1/8 cup fresh basil, julienned
1-2 limes, juiced
3 T. olive oil
- Place all salad ingredients in a large serving bowl. Toss gently.
- In a small bowl, whisk together the lime juice and olive oil. Pour over the watermelon and distribute evenly.

I love this salad! So refreshing. I just brought a similar one to a BBQ. I’ve never tried the lime in it but I certainly will next time.
