Peanut Butter Banana Smoothie
I have been feeling seriously wiped out for months. Every afternoon I hit a slump, and all I can think about is drinking coffee or taking a nap. Preferably both. I finally pushed aside my iced latte and Google symptom search in search of a quick, healthy snack. I was looking for an energy boost, something with protein but without refined sugar.
This peanut butter banana smoothie fits the bill perfectly. It combines milk, peanut butter, honey, bananas, and Chia seeds for a cool, creamy afternoon pick-me-up (It’s kind of like the smoothie version of No Bake Energy Bites). And I think it actually works! I’m not exactly faster than a speeding bullet, more powerful than a locomotive, or able to leap tall buildings in a single bound. But I can play LEGOs with my son without falling asleep on the floor. So, progress!
I love the simplicity of a recipe that you can swirl together in less than five minutes, especially when you have a stash of frozen bananas on hand. If you don’t, you could easily use fresh bananas and a handful of ice cubes. A squeeze of chocolate syrup, scoop of Nutella, or pinch of cinnamon would be delicious additions, as well.
I’m pretty new to the smoothie game, at least anything different from the standard berry-and-yogurt combo. We finally broke down and bought a Vitamix a few years back. It’s quickly become one of my favorite kitchen appliances. I feel like when you spend that much on a blender, you should be able to pulverize pretty much anything. So I do.
I have been tossing in all kinds of nutritious ingredients. My kids eyeball their glasses warily, “What’s in this one, Mom?” Oh, you know, just apples and some other stuff… (coconut oil, avocado, kale). But peanut butter and bananas? Now that’s a combination they happily support.
Someday I’ll catch up on sleep (probably when my children are grown and/or I have watched every episode of Blue Bloods). Until then, this smoothie makes my afternoons just a little bit sweeter.
Peanut Butter Banana Smoothie
1 1/2 c. milk (dairy or plant-based)
1/2 c. smooth peanut (or other nut) butter
2 frozen bananas, cut into chunks
1 T. honey
1 T. Chia seeds (optional)
- In a blender, puree the milk, peanut butter, bananas, and honey until smooth, about 30 seconds.
- Stir in the Chia seeds, if desired.

Yum! I love smoothies that are sweetened with natural sweeteners as opposed to syrups and sugar!
