During the month of January, I’ve been trying to create meals based on ingredients from my pantry and freezer as much as possible. I, along with my wallet and bathroom scale, am still recovering from December’s crazy rush of shopping-cooking-eating. I normally hate the blahs of January, but I am loving this month so far. I think it just feels good to slow down and simplify our routine a bit.
My husband helped me create this menu plan as we watched Downton Abbey last night. He asked for scallops to be added. You know, just in case I happened to pick some up when I was at the fish market this week. Needless to say, they didn’t make the final cut.
Here’s what’s for dinner at my house this week:
Monday — Breakfast for Dinner: Sour Cream Pancakes, scrambled eggs, fresh fruit
Tuesday — Burritos with Crockpot Pinto Beans, Chips & Salsa
Wednesday — Perfect Veggie Burger, Sweet Potato Fries
Thursday — Quinoa Patties, Raw Tuscan Kale Salad, leftover Sweet Potato Fries
Friday — Dinner Out
Saturday — Spaghetti with Roasted Marinara Sauce (from the freezer), No-Knead Bread
Sunday — leftovers

I don’t do menus and know I should but with our freeze dried food, I get lazy. I just throw some ingredients in a pot and there it is. 🙂

My menu plan:
M: pork chop suey with leftover pork roast and leftover cooked whole wheat thin spaghetti, stir fried veggies (whatever’s in the fridge)
T: potato frittata with feta and scallions (from the new “The Smitten Kitchen Cookbook”), English muffins or biscuits (I have all the frittata ingredients on hand)
W: pork burritos with rice, homemade refried beans (adapted from your site), homemade guacamole, fruit
Th: cabbage patch soup (lots of recipes on the internet), homemade bread or cornbread
F: leftovers

Not sure what the correct way is to quote/cite on the web but in
Allrecipes.com there is a recipe for “Refried beans without the refry” It’s a great one for the crockpot.
