I love a good, healthy snack that I can make quickly and doesn’t require cooking or baking. We make these weekly and have modified them many times and in many different ways! The original recipe is listed at the bottom but our current favorite is the first one listed. They are easy to make and very hard to screw up. Play around and create your own.

Gluten-Free Chocolate Almond Cookie Bites
Ingredients
2/3 cup raw almonds
1/2 cup gluten-free oats (or regular, if you don’t need GF)
3/4 cup almond meal, cashew or oat flour
1 T coconut flour (optional)
1 T shredded coconut, unsweetened (optional)
1 tsp salt
2 T cocoa powder
5-6 pitted dates
1 tsp vanilla extract
1 tsp coconut oil
3 T pure maple syrup
3 T chocolate chips (Enjoy Life is a great, allergy-friendly brand)
Blend almonds and oats in food processor until fine crumble (about 1 minute or more, doesn’t have to be too fine).
Add flour, cocoa powder, shredded coconut salt & dates. Process again until fine (about 2 minutes until big date chunks are gone).
Add vanilla, maple syrup and coconut oil until it starts to come together.
Add chocolate chips and pulse until just incorporated. It will be crumbly, which is fine, as long as when you pick it up it sticks together.
Form into balls and pop in the fridge for 30 minutes. You can even skip this step and just start eating. These can be stored in an air tight container in the fridge.
*Check the bulk section at your local grocery store for almonds, different flours, dates, oats, coconut and more. Costco also has coconut oil and flour for a good price!
Original Almond Cookie Bites
Ingredients
2/3 cup almonds
1/2 cup regular oats
3/4 cup whole wheat flour
1 tsp salt
5-6 pitted dates, chopped
1 tsp vanilla extract
3 T pure maple syrup (may need 4 T)
3 T chocolate chips
Blend together the same way as listed above.

interesting. Are you using the dates as a sweetner? i’ve heard of this but never tried. Also my husband doesn’t eat chocolate. If I omitted the chips, think it would still be tastey? Almond butter maybe?
